1.5 cups sourdough starter
3 cups warm water
1.75 cups white flour
1.75 cups whole wheat flour
1.5 teaspoon salt
1.5 teaspoon soda
3 tablespoons sugar
1/3 cup homemade (unsweetened)applesauce
up to 1 cup white flour to 'thicken' it up for pancake batter
cinnamon, nutmeg, almond extract or other spices to taste
Using a lid to convection cook will help them cook without burning.
In the morning, combine the last five ingredients to sourdough mixture. Mix well but don't beat. Add your preferred spices. Cook in non-stick skillet over medium heat (I use the lid to help cook more thoroughly). They will take longer than regular pancakes. Using a 1/4 cup measuring cup, will make approximately 36 pancakes.
