Introduction

A much quicker version of the Italian classic; less time, but no less taste. A much quicker version of the Italian classic; less time, but no less taste.
Number of Servings: 6

Ingredients

    1 pound lean ground beef
    1 small onion (chopped)
    3 cloves garlic (minced)
    1 (14-ounce) can diced tomatoes (undrained)
    1 1/4 cups water
    8 ounces tomato sauce
    1 tbsp dried parsley flakes
    1 tsp dried basil leaves
    1 tsp dried oregano leaves
    1 tsp salt
    2 1/2 cups broken-up whole wheat lasagna noodles
    1 cup fat-free cottage cheese
    1/4 cup fat-free grated Parmesan cheese
    Dash dried basil and pepper (optional)
    1 egg
    Shredded fat-free mozzarella cheese for garnish

Directions

In a large skillet, brown beef with onions and garlic. Drain.
Add tomatoes, water, tomato sauce, parsley, basil, oregano, and salt.
Stir in uncooked pasta.
Bring to a boil, stirring occasionally.
Reduce heat, cover and simmer for 20 minutes or until pasta is tender.
Combine cottage and Parmesan cheeses.
Mix in the egg.
Sprinkle in basil and pepper to taste.
Drop cheese mixture by rounded tablespoons onto pasta mixture.
Cover and cook for 5 minutes more.
Sprinkle with shredded mozzarella and serve.

    Great recipe! Its a great alternative to lasagna, which is good for me because I'm such a pasta lover. Its a little gooey at first, but if you let it cool off a little first, it turns out great. We will add this to our dinner menu more often. Try using Jennie-O Italian Seasoned Turkey, its great! :) - 1/20/09

    This was really delicious. We ate leftovers for the next two days. I substituted ground turkey, egg whites and used a little less water than called for to keep it from getting too soupy. My boyfriend already wants me to make it again next week! - 2/2/09

    Easy to make. I used Italian diced tomatoes so didn't need to use extra Italian seasonings. Used zucchini instead of noodles, so didn't add water. Decreased cottage cheese by 1/4 cup and used mozzarella instead. Used 6 cheese mix for parmesan. Would use tomato paste for sauce if using zucchini. - 11/25/08

    This was AMAZING!!! Seriously, you would never, ever think it was low cal. My husband said this was the best calorie-conscious meal I've EVER prepared!

    I used ground turkey instead of beef, and 2 cups fat free mozzarella in place of cottage cheese. It still came out to only 263 cals! - 1/20/09

    This was soooo easy to prepare~ similar to making hamburger helper, IMO, but a million times better. I did substitute ground turkey for the beef and part skim ricotta for the cottage cheese. The flavor is great and the cost to prepare is relatively inexpensive. Love it!! - 3/15/09

    I made this recipe with ground venison last night. Instead of broken up lasagna noodles I used whole wheat egg noodles. Use a full can of tomato sauce too, and the consistency was perfect. Pasta turned out perfect and the taste was phenomenal. Thanks for the excellent recipe! - 2/12/09

    Since we like our sauce a little sweeter, I added 1T of Equal. I also added mushrooms and used 1/2 an onion and ground turkey.
    I baked in the oven for 10 min @ 400 degrees after I sprinkled with cheese. - 2/14/09

    This was GREAT! So much easier than traditional lasagna and absolutely delicious! My 14 y.o. said, "This is diet food?!" Definitely being added to my meal rotation. I used farfalle (bow ties) instead of broken lasagna, but was otherwise faithful to the recipe. I might add mushrooms next time. :) - 5/22/09

    made this with turkey sausage and added red pepper flakes; still thought it was a tad bland.

    I have never made a skillet lasagna before; it may have been easier to just cook the noodles seperately. Mine stuck together, and I had to add water during cooking because too much boiled off. - 2/5/09

    Thank you for sharing this recipe! It inspired me to make something similar. Both hubby and I loved what this recipe inspired! I omitted the egg.     OMG SO AMAZING!!!! I loved it, I am a huge Italian foodie and that usually kills my diet. Also it makes SO MUCH! A serving was really filling I loved every bite of it.     I made this using Ricotta, Low Fat Cheddar and Low fat Mozz. I added a tin of aduki beans for fibre, but only used 60g Lasagne sheets, and cooked in the oven. I used a little oil to sauté the onions and divided the recipe in 5 not 6, cals / portion 600, higher but still OK on a 1500/2000 cal plan - 3/12/09

    I love, love, love this!!! I messed up when making this by grabing 1/2 Tablespoon instead of 1 teaspoon but loved the flavor it gave! Also added a bit more garlic as I was using a pre-minced kind. Forgot all about adding the Mozz cheese but didn't miss it a bit.. - 1/12/09

    This is the first SP recipe hubby liked! The salt was to much for me (had cotton mouth all night), but I will certainly make again with less! I also used FF ricotta and regular parm since we like a dryer lasagna, but then used egg substitute to balance the parm. - 12/30/08
