Introduction

Number of Servings: 8

Ingredients

    1 large sweet onion-small dice
    2 large cucumbers, peeled and small diced
    5 large tomatos, small diced
    1 cup loosely packed fresh mint- minced finely
    4 oz fresh squeezed lime juice
    4 tbls(3oz) EVOO(extra virgin olive oil)
    2 teas salt and 2 teas pepper

Directions

IN a large bowl mix onion through mint throughly. In a smaller bowl mix lime juice, oil, salt and pepper. Whisk until oil is no longer seperated from juice. Pout over veggies and toss to coat. YUMMY!

  • in my arabic family we eat this all the time. usually with parsley and lemon instead of mint and lime but either way is great! i also go easy on the salt and pepper. - 2/7/08

  • This is one of my favorite salads. I get it every time we go out for Persian food. It works best if you use roma tomatoes and the smaller cucumbers. I think the cucumbers are Persian or Italian but I'm not sure what type they are. Both have more flesh and less seeds. - 1/26/08
