Chicken soup with meatballs

Ingredients

    Chicken Broth, 7 cup (8 fl oz)
    Chicken Breast, cooked, no skin,2 breast, bone and skin removed
    Celery, raw, 1 cup, diced
    Carrots, raw, 1 cup, chopped
    Onions, raw, 1 cup, chopped
    Garlic, 3 cloves
    Orzo Pasta, 1 cup, uncooked
    *Spinach, cooked, .5 cup
    Veal, ground, 10 oz
    Egg, fresh, 1 large
    Bread crumbs, dry, grated, seasoned, .5 cup
    Parmesan Cheese, grated, .25 cup

Directions

Pour broth in large pot, add celery, carrots, onion, and garlic. Bring to a boil and boil until vegetables are tender. When tender add diced chicken breast, and spinach, return to a boil. In a separate pot boil water. Cook orzo until tender. Drain, set aside. In large bowl, mix veal, egg, bread crumbs and cheese. Roll into 1 inch balls. Add orzo to soup, drop meatballs into boiling soup. Continue to boil for 15 min or until meatballs are cooked through (not pink inside) Enjoy!
