Ingredients

4 Ripe Tomatoes
1 Onion
1 Green Pepper
3 Garlic Cloves (minced garlic works also works well)
2 Jalapeno Pepper (Adjust pepper amount and type to taste)
1 6oz can No Salt Added Tomato Paste
1 Tbsp Parsley
1 Tbsp Oregano
2 Tbsp Basil
1 Tsp Salt
1 Tsp Sugar
1 Tbsp Olive Oil
Tips
I usually use a hotter pepper and add red pepper flakes while sauteing the vegetables.
Prepare a day before for even better flavor
Great for jarring for use later
Directions
- Skin and seed tomatoes (cutting a small "x" in the bottom of the tomato and boiling for a few minutes help to remove skin)
- Cut onion, green peppers, and jalapeno into small chunks and crush garlic
- Heat olive oil and saute cut onions, green peppers, and jalapeno until onion becomes translucent
- Add garlic; be careful to not burn
-Blend tomatoes, tomato paste, and sauteed vegetables until smooth
- Add sauce to saucepan and stir in remaining dried ingredients
- Heat covered over medium heat for approximately 30 minutes--stir occasionally
