Berry-Cinnamon Breakfast Quinoa

Introduction

Number of Servings: 4

Ingredients

    1 cup soy milk, unsweetened
    1 cup quinoa, rinsed and drained
    1/2 t. cinnamon
    2 cups fresh blueberries
    1 T honey
    1 T molasses, blackstrap
    1/4 cup chopped walnuts


Directions

In a medium saucepan, bring milk, i cup water and quinoa to a boil on high heat. Reduce heat to low; cover and simmer until quinoa absorbs most of the liquid, 15 minutes. Turn off heat: let stand covered 5 minutes. stir in berries, molasses, honey and cinnamon; transfer to 4 bowls; top each bowl with 1/4 of the chopped walnuts.

Serving Size: Makes 4 1-cup serving
