Potato & Leek Soup

Introduction

MAde with homemade chicken stock. I used someone else's stock for the ingredient list so it has bumped up the sodium - my stock had no extra salt so would have been lower :) MAde with homemade chicken stock. Number of Servings: 6

Ingredients

    2 T Olive Oil
    2 carrots
    2 onions
    2 ribs of celery
    2 fat cloves garlic
    2 leeks
    2 large potatoes
    2 L chicken stock (homemade tastes best)

Tips

OMG I LOVE soup.


Directions

Put oil into a large saucepan. Heat then add all chopped vege. Sweat the vege until the carrots are slightly softened. Add the chicken stock and simmer for around 20 mins. Season with salt and pepper. I blend it now but you can leave it chunky too.

Serving Size: 6 serves.
