    Salad:
    1 large mango, peeled & sliced
    2 cups sliced, cooked chicken
    1 medium sweet red pepper, sliced into thin strips
    1 medium cucumber, sliced
    4 cups baby spinach
    2 cups arugula
    1/2 cup sliced purple onion
    1/3 cup toasted, non-salted cashews
    1/4 cup feta cheese
    lime & lemon wedges for garnish
    Dressing:
    2 tbsp low-sodium soy sauce
    2 tbsp lime juice
    2 tbsp canola or extra virgin olive oil
    1 tsp chili powder
