Low Fat Cheese Enchiladas

Ingredients

    Filling
    - 2 c 1% cottage cheese
    - 2 c part skim ricotta cheese
    - 100 g shredded Monterey Jack cheese
    - 1/4 c chopped parsley
    - 1/4 c chopped green onions
    - 1 can chopped green chilies
    - 1/8 c chopped pickled jalapenos
    - salt & pepper to taste

    - 18 whole wheat Weight Watchers tortillas
    - 3 c salsa or taco sauce
    - 50 g shredded Monterey Jack cheese

Directions

Serving Size: 1 enchilada

Mix filling ingredients. Portion among tortillas & roll up. Place seam side down in sprayed baking pan. Top with sauce & shredded cheese. Cover with foil & bake in 350* oven for 30 minutes or until hot. Serve with guacamole if desired.
