Vegan No-Bake Cocoa-Almond Cookies

Introduction

A yummy, nutrient-dense vegan (and peanut-free!) version of everyone's favorite cocoa no-bake cookies. You're just 25 minutes away from a delicious dessert! A yummy, nutrient-dense vegan (and peanut-free!) version of everyone's favorite cocoa no-bake cookies. You're just 25 minutes away from a delicious dessert!
Number of Servings: 16

Ingredients

    1 cup oats
    5 tbsp unsweetened cocoa powder
    1/4 cup coconut oil
    2/3 cup maple syrup
    1 tbsp ground cinnamon
    1/2 cup unsalted almond butter

Directions

Heat cocoa powder, coconut oil, and maple syrup over medium heat. Bring to a boil and continue to cook, stirring constantly for 3 minutes.

Immediately add remaining ingredients, stirring until combined. Removed from heat and keep stirring for at least one minute, or until the batter pulls away from the sides and starts to look a bit dry.

Using a cookie scoop or a heaping tablepsoon, put 16 balls of batter onto a parchment-covered cookie sheet. Flatten slightly with the back of a spoon or bottom of a glass.

Refrigerate for 20 minutes or until cookies are set.

Serving Size: Makes 16 cookies, one cookie per serving.
