Breakfast burittos

Introduction

This has a bunch of veggies in a small package. This has a bunch of veggies in a small package.
Number of Servings: 4

Ingredients

    Bell peppers (Green, Red, Yellow, Orange),1/2 cup
    Egg, fresh, 2 large
    Great Value 6" flour tortilla 1 serving=1 tortilla, 4
    Yukon Gold Potato ( 1 medium sized potato)
    Mushroom, baby bella, fresh, 3 mushrooms
    *red (purple) onion (4 rings)

Tips

If you wish add 2 oz of homemade sausage to veggie mixture once it has been cooked. Add 89 1/2 calories to each burrito for correct calories.


Directions

Shred the potato into very fine thin strips. Cook til tender. Cut all veggies into small bite-size pieces, cook peppers and onions for just a minute, add the mushrooms and cook til tender. Add beaten eggs and cook til eggs are cooked through. heat up tortillas 2 at a time so they wont break or rip. place potatoes on tortilla then veggies, wrap up.
