Paleo Mashed Root Vegetables

Paleo Mashed Root Vegetables

Introduction

Delicious root vegetable mash. Slightly sweet, very filling. Delicious root vegetable mash. Slightly sweet, very filling.
Number of Servings: 4

Ingredients

    3 turnips, peeled and chopped small
    2 large parsnips, peeled and chopped small
    1/4 cup chopped onion
    2 tbsp coconut oil

Tips

When processing, you may want to thin with some chicken stock or additional oil. Also spices to taste.


Directions

Preheat oven to 400

Chop vegetables. Toss in olive oil.

Bake on sheet at 400 for 35-40 min or until soft. The smaller you chop the vegetables, the shorter the cooking time.

Process in food processor.

Serving Size: makes 4 servings, roughly 1/2 cup each
