1 large wholewheat pita bread
1/2 large bunch fresh spinach (can use the frozen one too)
25g or 1 tablespoon of tomato paste
1 medium sized onion
1 teaspoon olive oil
1/4 cup peanuts
1 teaspoon cinnamon
1 teaspoon turmeric
1/2 cup grated low-fat cheese
1/4 cup TVP (vegetarian mince)
Prepare the TVP according to packet instructions so it's ready to use. Dice the onion and chop the peanuts.
Cook your spinach in a saucepan with a bit of water added. Drain well.
In a pan, heat the olive oil, then cook the onion until soft. Add the cinnamon and turmeric, stir, then add the peanuts.
Lay your pita bread on a large tray. Spread the tomato paste so it covers it (it will be thin). On top of that, spread the spinach over, then your TVP, then your onion and spice mix.
Top with the cheese, and bake in the oven for around 10-15 minutes or until cheese is melted and pita is crisp.
