Norwegian Macaroni and Ham

Introduction

Surprisingly lite and easy. Great winter meal! Surprisingly lite and easy. Great winter meal!
Number of Servings: 4

Ingredients

    2 1/2 cups dry macaroni
    3 cups soy milk
    1 Tbsp Butter
    2 Tbsp Flour (heaping)
    1/2 tsp salt
    1/8 tsp pepper
    1 beatten egg
    1/4 c grated parmesan
    1/2 lb. thinly slivered lean ham

Directions

Cook, set aside and cool macaroni.

Make White Sauce:
3 cups soy milk
1 Tbsp butter
2 Tbsp flour (heaping)
1/2 tsp salt
1/8 tsp pepper
1 beatten egg

Mix well with a whisk and gently bring to a simmer until thickened.

Add:

1/4 cup grated parmesan
1/2 lb thinly slivered lean ham
cooked macaroni

Put in a shallow greased backing dish & sprinkle w/ additional 2-3 Tbsp. parmesan and paprika

Bake at 350 about 50-60 minutes until crispy and light brown.

Makes 4 servings.
