Mexican Style Pasta and Beef

Introduction

Ingredients

    1 box of Smart Pasta, cooked and drained
    1 lb extra lean ground beef
    1/2 cup velveta cheese
    1 large onion, chopped
    1 green pepper, chopped
    2 tbsp chili powder
    2 tsp oregano
    2 cups Skim Milk
    1 large can stewed tomatoes
    1 small can tomato paste


Tips

I am not entirely sure of how big a serving size is, I'd guess about one and a half to two cups but I'll have to measure it out next time I make it to be sure. (Sorry)
I also make this with no-salt added stewed tomatoes to reduce the sodium sometimes and I don't miss the salt.


Directions

Cook ground beef, drain and rinse well. In a large pot, add onions and green pepper to the beef and cook until onions are clear. Add spices, stir and add milk. Bring to a boil and add cheese, tomatoes and paste. Mix until cheese is melted. Simmer for about 5 mins and add cooked pasta. Stir well and serve. Can be served with fresh parm or cheese sprinkled on top but it is not really needed and not added in the calculations.

Serving Size: Makes approx. 8 servings
