Creamy Chicken & Broccoli Casserole With Noodles

Introduction

Ingredients

    ~18 oz chicken breast (trimmed of fat, ~6 3 oz breast or pieces
    ~1 can of 98% fat free Cream of Chicken Soup
    ~1 package of dry onion soup mix
    ~1 container (~2c.) reduced fat sour cream
    ~ approx. 2 cups of fresh broccoli, partially streamed
    (enough to cover the bottom of a 13x9 glass pan)
    ~1 tspb minced garlic (optional)
    ~1 package of Wheat Egg Noodles

Directions

Cut each chicken breast into two or three pieces. Mix the cream of chicken soup, sour cream, package of onion soup mix and garlic. Mix in the chicken. Line the bottom of a 13x9 rectangle glass pan with the partially cooked broccoli (you can use fresh or frozen, I use enough to cover the bottom of the pan.) Put the chicken mixture on top. Cover the pan with foil, bake at 375 degrees for about 35-40 minutes (or until the chicken is tender.) The sauce will thicken as it cools. Cook the wheat egg noodles according to the package. Top one cup of noodles with one serving of the chicken mixture. This tastes even better the next day (because the sauce gets REALLY thick when you refrigerate it.) Enjoy!

*You can use different 98% fat free soups for different flavor and use mixed veggies in place of broccoli. Sometimes I use half broccoli and half baby carrots. I've also omitted the noodles and put the chicken mixture on top of a tossed salad mixture (cold, it's really good.)
I've seen a similar recipe on dwlz.com for a crockpot chicken stroganoff, but it's cooked with frozen chicken and cream of mushroom soup (and there's no veggies in it.)
