Ingredients

    1 carrot, cut into matchsticks
    1 cup bean sprouts
    6 scallions, sliced thin
    6 Shitake mushrooms, sliced
    12 oz. top sirloin, sliced
    Korean Style sweet potato noodles
    2 Tbs. sesame oil
    1 Tbs. soy sauce
    1/4 each yellow and red bell pepper
    3 ounces baby spinach

Directions

Bring a large pot of water to a boil. Remove from heat and add noodles. Set aside 10 minutes. In the meantime,
heat 1 Tbs. oil until shimmering. Add and cook until slightly softened. Add bean sprouts, mushrooms, bell peppers and soften slightly. Drain noodles and put in large bowl with 1 1/2 tsp of sesame oil and soy sauce. Cut noodles and add veggies. Stir. Add remainder of oil to Dutch oven and cook beef quickly over medium high heat. Stir cooked beef into noodle and veggies and sprinkle with sesame seeds
