Cauliflower with Cheese Sauce

Introduction

Number of Servings: 4

Ingredients

    8 cups raw cauliflower, florets cut into bite size pieces.

    5 slices Kraft 2% American Cheese
    2 TBS. nonfat milk

Directions

Wash cauliflower, and cut florets into bite sized/smaller pieces...enough to make 8 cups. (They will shrink down during boiling to @ 4 cups)

Bring cauliflower to a boil and cook @3 minutes. Drain and return to the pan. On LOW heat, add 2 TBS. nonfat milk to the pan, then place the cheese slices over the cauliflower. Cheese will melt and combine with the milk to make a creamy sauce. Stir gently while cheese is melting and DO NOT BOIL. When cheese has melted to a sauce consistency, toss cauliflower gently to coat , and serve. ***Note: the sauce solidifies when it cools. I dont usually reheat it, but it can be done on VERY LOW heat with an additional TBS. of nonfat milk.***

Makes 4 servings. 1 serving = @1 cup.
If you prefer 1/2 cup servings, cut nutritional information in half.
