Very Vanilla Cupcakes

Ingredients

    Egg, fresh, 2 large
    Coconut Oil (extra virgin NUTIVA brand), 1/4 cup
    Applesauce, unsweetened, 1/2 cup
    Vanilla Extract, 1 tbsp
    Almond flour - blanched (Honeyville Grain), 2.5 cup
    Salt, 1/2 tsp
    Baking Soda, 1/2 tsp
    KAL Pure Stevia, 1/8 - 1/4 tsp (or to taste)

Directions

preheat oven to 350. Line 10 muffin cups with liners.

In large bowl, whisk egg yolks until pale yellow, then whisk coconut oil, applesauce, and vanilla extract in. In separate bowl, whick egg whites until stiff peaks form. Gently fold egg whites into mixture. In separate bowl, combine almond flour, baking soda, salt, Stevia. Fold into wet mixture. Scoop batter into muffin cups.
Bake for 20-30 minutes, until tops are golden brown or toothpick comes out clean. Let cupcakes cool in pan for 30 minutes.

Serving Size: 10 cupcakes
