Stuffed Mushrooms - liver dip

8 oz braunschweiger or liverwurst
4 Laughing Cow French Onion cheese wedges
1/4 c Marzetti Spinach dip
1/4 c mayonnaise (or sour cream)
2 T minced matchstick carrots
2 T finely chopped celery
2 T finely chopped fresh spring onion
2 T finely chopped or dried parsley
2 pkg (24 oz ea) large stuffing mushrooms
4 slices muenster cheese
2 T coconut oil
4 T butter

The mushrooms I used came from Sam's - they're huge (bigger than typical grocery stuffers). You might also use baby portabellas.
Allow meat and cheese wedges to come to room temp. Mash together with a fork. Add dip, mayo (or sour cream, or yogurt), and minced veggies and mix well.
Saute mushroom caps in coconut oil and butter until bases are slightly softened. Set aside on a baking tray.
Fill each mushroom cap to slightly higher than their edges. Top with a quarter (or smaller) slice of muenster cheese (or whatever you prefer; could also be parm/romano grind or bread-dipping mix).
Cook at 350°F until cheese begins to melt. Finish briefly in the broiler for color.
Serving Size: makes 24 big caps!
