Chicken Salad - Marilyn's Favorite

Introduction

This version uses fat free mayo. This version uses fat free mayo.
Number of Servings: 12

Ingredients

    3 cups cooked chicken
    1 cup boiling water
    1/2 cup craisins or white raisins
    1 cup crushed pineapple (drained)
    6 scallions, finely chopped
    1 cup chopped celery
    1/2 cup broken pecans
    1 cup fat free mayonnaise
    2 teaspoon dried tarragon
    1-1/2 teaspoon salt
    1/2 teaspoon white pepper

Directions

Chop chicken into bite-sized pieces. Pour boiling water over craisins and let stand for 5 minutes. Drain. Add craisins, pineapple, scallions, celery and pecans to chicken. In a separate bowl, combine mayonnaise, tarragon, salt and white pepper. Add to chicken mixture, stirring until thoroughly mixed. Garnish with parsley. Serves 10 (or more, depending on how you serve it.)

Serving Size: Makes 10 1/3-cup servings.

  • This sounds like a yummy combo! I need to experiment more with spices. Dunno if I've ever used tarragon! I have a curried chicken salad recipe I've been craving recently (and that's a good crave) - may try this instead:) - 4/25/12
