Decandent Beef Almond Stew



Introduction

Number of Servings: 12

Ingredients

    28 ounces of Stew Beef, trimmed and cut into bite-size pieces
    2 Tbls. Olive Oil
    5 cups of raw Butternut Squash, cut into medium-size chunks
    4 cups of peeled Baby Carrots
    6 Celery Heart stalks, chopped
    1 large chopped Onion
    1 Tbls. Salt
    1 Tbls. Garlic Powder
    1/2 teas. Zatarains Creole Seasoning
    1/2 teas. Allspice
    6 cups of Water, or enough to cover the beef
    3/4 cup Almond Flour

Directions

Brown the beef in the olive oil until throughly cooked. Add the celery, seasonings, and water, using enough water to completely cover the top of the beef. Cover and cook on simmer for 20 minutes. Add the carrots. Simmer until "just" tender. Add the squash, again cooking until "just" tender. Scoop 2 cups of liquid out from pan, and throughly stir the almond flour into it, making a paste. With a big spoon, mix the paste into the rest of the stew, and let simmer for 15 minutes, stirring frequently. Some of the squash chunks, upon stirring, will blend into the gravy.
