Dried Beef and Baked Potatoes

Ingredients

    2 Jars (2.5 ounces each) dried beef, shredded
    1 tbsp butter
    1 can (13 ounces) evaporated milk
    1 can (8.5 ounces) water chestnuts, drained and sliced
    cup shredded cheddar cheese ( about 2 ounces)
    2 green onions (with tops), sliced ( about cup)
    tsp dry mustard
    5 hot baked potatoes
    2 tbsp shredded cheddar cheese

Directions

About hour before potatoes are done, cook and stir dried beef in 10 inch skillet over medium heat until butter is absorbed.
Remove from heat; stir in milk. Heat to boiling stirring constantly.
Boil and stir 1 minute.
Stir in water chestnuts, cuo cheese, onions, and dry mustard.
Heat until water chestnuts are hot.
Split hot baked potatoes lenghtwise; fluff with fork. Top potatoes with creamed beef mixture.
Sprinkle with 2 tablespoons cheese.

Serving Size: Makes 5 medium potatoes ( servings)
