**the original recipe calls for 1/2 cup butter, but you can substitute applesauce or chia seeds ( in gel form). This recipe calls for the chia seeds version, but I also calculated it with 1/2 Cup unsweetened applesauce and it is a difference of 2 calories. **
1/2 cup gelled chia seeds
1 cup splenda
1 & 1/2 cup flour
1 tsp baking soda
1 tsp salt
3 ripe bananas
preheat oven to 325 degrees
In a large bowl, mix together gelled chia seeds and splenda. Stir in the flour, baking soda, and salt. Finally, blend in the mashed bananas.
Bake for approx 30-35 min in muffin pan, or approx 60 min in loaf pan.
Serving Size: makes 8 muffins
