Lynda's Tuna Melt

Number of Servings: 4

Ingredients

    1 can Clover Leaf flaked light tuna in water (drained)
    2 tbsp diced green pepper
    1 tbsp diced onion (I used green onion)
    3 small diced mushrooms
    3 diced grape tomatoes
    1 tbsp extra virgin olive oil
    4 slices whole wheat bread (thin)
    2 oz low fat cheddar cheese (shredded)

Tips

Recipe can be altered by using whichever type of vegetables you like (if you do not like the ones in the recipe).


Directions

Combine first 6 ingredients. Spread 1/4 of tuna mixture (approx 1/4 cup) on each slice of bread cover each with 1/2 ounce of cheese. Put in oven or toaster oven till cheese is melted. Enjoy!
