Cheese N' Sausage Squares

Ingredients

    1 pound breakfast sausage links
    1 medium cooking onion, diced
    6 eggs, lightly beaten
    1 cup milk
    3 cups grated raw potatoes
    1 cups shredded Cheddar cheese
    1 cup small curd cottage cheese
    1 cup shredded Swiss cheese
    1 tsp. dry mustard
    1 tsp. salt
    1 tsp. pepper

Tips

The denser cheese rised to the top while baking.
From the freezer:
Reheat on high heat in microwave oven for 3 - 5 minute depending on your microwave oven wattage.


Directions

In a large skillet, cook till sausages are browned and onions are transluscent, drain.
Chop the sausages into bite size pieces.

Grate potatoes, rinse, to remove excess starch. Place in paper towel or tea towel, squeeze to remove excess moisture.

Mix the onion and sausage together, transfer to a greased or a non stick 13-in. x 9-in. x 2-in. baking dish.
Layer with grated raw potato.

Whip eggs, milk, all cheeses, dry mustard, salt & pepper, together. Pour over sausage,onion potatoes.

Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly.
Let stand for 20 minutes to cool slightly before cutting.
Arrange the cut squares on a baking sheet, which has been lined with parchment paper.
Freeze, when frozen pop off the squares into a zip lock bag.

Serving Size: Makes 18 4 inch pieces
