½ c flour
1 tsp baking powder
1 - 8 oz can chopped green chilies
1 pint cottage cheese
1 pound jack cheese, grated
At Christmas I add a small jar of drained pimento to make it red and green.
This can be assembled ahead of time, reserving the flour and baking powder. Refrigerate overnight. Add just before baking.
Good for leftovers. This freezes well. Reheat in the microwave.
Beat eggs lightly, blend in other ingredients.
Pour into pan.
Bake at 400 degrees for 10-15- minutes reduce temp to 350 and bake for 25-30 minutes more, until edges are brown and center is set.
