Ingredients

2 cups Chickpeas (garbanzo beans), cooked
2 medium Carrots, grated
2 tsp Nutritional Yeast
1 tsp Coconut Oil (Oz used olive oil), melted but not hot
2 tsp Poppy seeds
Tips
I used a food processor to mash up the chickpeas but I would recommend cooking them first so they'll break up a bit easier. It wasn't bad just rather bland!
Directions
Preheat oven to 350 degrees.
In a large bowl, mix all of the ingredients, except the poppy seeds, until you get a doughy consistency. Evenly drop spoonfuls of dough into muffin pan. Top with poppy seeds and bake for 30 minutes.
