Chicken Fried Veggies & Rice

Ingredients

    3.5 cups cooked brown rice (cooked with the half cup of broth & 1 tsp. olive oil)
    16 oz bag frozen spinach (cooked & drained)
    1 large onion chopped
    1 bell pepper chopped
    1 carrot chopped
    1 skinless cooked chicken breast chopped
    1 tbls. olive oil
    2 large eggs
    seasoning to taste


Directions

1. Heat 1 tbls. olive oil in frying pan, saute all chopped veggies.
2. Add eggs and scramble with veggies.
3. Add chicken, rice and spinach, season to taste.

Serving Size: makes 4 servings
