Seitan Gyro with Pita-vegan

Ingredients

8 ounces of seitan
1 tomato diced or sliced
2 Tbs diced red onion
2 Tbs lemon juice
1 tsp dried oregano
1 garlic clove grated or pressed
salt to taste
Dressing
1 Tbs tahini
1/2 Tbs red wine vinegar or lemon juice
pinch of dried oregano
salt and pepper to taste
2 Whole wheat pitas, read the label to make sure they're vegan!
Tips
Directions
Add the lemon juice, garlic, salt, and oregano to the setain. Let it sit for a least 30 minutes to soak up the marinade.
You can pan fry the seitan with a little cooking spray, grill it or throw in under the broiler for a few minutes to heat it up.
While it's heating up put your pitas in the oven for a couple of minutes to warm up as well.
While you're seitan and pitas are heating up you want to make the dressing. Combine the tahini, vinegar, oregano and salt together until they emulsify. If you think it's still a little too thick you can add some water.
Take your pitas put the seitan on them, add the onions and tomatoes and top with the dressing.
If you're not vegan and are vegetarian adding a little feta to the sandwich is a nice touch, and adding a little yogurt to the dressing works nicely too.
