Protein Carrot Cake Pancakes

Protein Carrot Cake Pancakes

Ingredients

    1/2 c old fashioned oats
    1 scoop vanilla whey
    3 egg whites
    1 jar baby food carrots (4 oz)
    1tsp pumpkin pie spice
    1-2 packets stevia
    water to desired consistency (optional)

    Top with:
    1 tbsp reduced fat cream cheese
    1 tbsp agave maple syrup or real maple syrup
    1/2 tbsp crushed walnuts
    optional: cinnamon, stevia, raisins

Directions

Blend all pancake ingredients in a magic bullet style blender. (you can whisk it all together, it will have a lumpier consistency) Pour onto hot skillet sprayed with non-stick spray. Will make 2 pancakes (1 serving). Top with toppings.
