Chicken Murphy

Ingredients

    Chicken cutlets -4 (1/2 breast eacH)
    Olive Oil - 2T
    Roasted Peppers - 6 Ozs, sliced
    Potatoes - 3 sliced
    Green pepper - 1 sliced
    Mushrooms - 1 C sliced
    Onion - 1 large, sliced
    Parseley
    Black pepper
    salt
    garlic - 2 T chopped
    1 C white vinegar

Directions

Slice cleaned potatoes and microwave for about 5 minutes. Spray large non-stick pan with Pam and add 2 T olive oil. Heat the oil. Saute chicken breasts (cut up in pieces). Add seasonings. When chicken is no longer pink, add green pepper, saute an additional 4 minutes. Add all other chopped vegetables and softened potatoes. When ingredients start to dry (stick), deglaze with one cup of white vinegar. Lower heat and saute for 30 minutes. Makes four servings.
