Chicken Alfredo

Ingredients

    2 1/4 cup dry whole wheat penne pasta
    2 cups fresh spinach
    1 tsp. olive oil
    3 garlic cloves
    1 cup sliced red onion
    1 cup carrot slices
    1 cup sliced mushrooms
    4 Tbs. butter
    4 Tbs. flour
    1/2 tsp. salt
    1/4 tsp. pepper
    3 Tbs. dried parsley
    1/2 cup light cream cheese
    2 cups nonfat milk
    3/4 cup reduced fat parmesan cheese
    10 oz. cooked skinless chicken breast


Directions

Cook pasta according to package directions.
Steam spinach until wilted
Saute garlic, onion, carrot slices and mushrooms in 1 tsp. olive oil
Melt butter in large saucepan. Add flour and cook until a thick paste. Add salt & pepper and pour in milk. Cook until bubbly, stirring frequently.
Stir in cream cheese; stir until lumps disappear.
Add 3/4 cups reduced fat parmesan cheese and stir well.
Add cooked chicken, wilted spinach, and sauteed vegetables. Cook another 5 minutes until heated through and serve.
