Ingredients
-
brown rice 1cup cooked
cooked lentils (1 cup)
Beets, fresh, 1 cup grated
Salt, .5 tsp
Thyme, fresh, 1 tsp
Fennel seed ground or crushed, .5 tsp
Dry Mustard, 1 tsp or ground up seeds, or a squirt of
liquid mustard
Minced Onion 1/4 cup
Garlic, 2 cloves minced
Oats 3/4 cup ground almost into
flour (measure after blending)
Tomato Paste, 3 Tablespoons
Tips
Directions
This recipe makes 7 patties measured with a 1/2 cup measuring cup. (A little less than 1/2 cup)
In a blender, whirl the oats until they are almost flour but have some pieces in the mix.
Use a hand greater and grate the beets. (If you have a salad shooter or food processor you can use that.) Use a stick blender to blend the mixture of rice, beets, lentils, garlic and onion together. Don't blend it too much, it should be coarsely blended. You will see pieces of lentils, rice and beets.
Grind the spices in a spice grinder.
Add the oats and remaining ingredients. Stir and form into 7 patties.
Cook on sprayed cookie sheet at 350 degrees for 10 minutes per side. Then turn the oven to broil and crisp up the patties. Watch closely, this will only take about 3 minutes. Let sit for a few minutes before serving. They will firm up better if you put them in refrigerator and keep them for a few hours or overnight. If you want to warm them up on your outdoor grill, bake them the day before but do not broil them.
