Light Alfredo Sauce

Number of Servings: 4

Ingredients

    2 tsp. Butter or Margerine
    2 tbsp finley chopped shallot
    1 clove garlic, crushed
    1 pint (2 c) fat free half and half
    3 tbsp flour
    1/2 C Light sour cream
    1/2 C. grated parmesan cheese
    1/2 tsp salt
    1/8 tsp white pepper

Directions

In a 2 quart sauce pan, melt butter over medium heat. Add shallot and garlic, cook and stir 1 minute.

In medium bowl, beat half and half and flour with wire whisk. Add to sauce pan.
Heat to boiling, stirring frequently.

Beat in sour cream w/ whisk, reduce heat to low, cook 1-2 minutes.

Remove from heat, stri in cheese, salt, and pepper.
