Pumpkin Broccoli Curry Souffle

Introduction

Number of Servings: 4

Ingredients

    1 1/2 C Pumpkin (puree/mashed)
    1C Broccoli (chopped)
    1/4 C 1% Milk
    2 T Madras Curry Paste Patak's
    1-2 Chives - finely chopped
    3 Eggs - separated

Tips

You can substitute pumpkin with squash...


Directions

Prep the squash or pumpkin. Mix the pumpkin, milk, and curry paste. Add the egg yolks and whisk together. Fold in chives.
In a separate bowl, whisk the egg whites until stiff peaks form but still moist.
Add to the pumpkin mix 1/3 at the time.
Scrape into a souffle dish (8X12) and bake at 400F for 40min.
Make 4 servings.
