Quick Curried Lentil Soup

Introduction

Buy most ingredients in bulk from the healthfood store and save money. This is soooooo quick and sooooo easy, not to mention absolutely delicious. I got it from one of my favorite regional mags.. Number of Servings: 8

Ingredients

    1 1/2 Cups - Red Lentils
    1 1/2 Cups - Green Lentils
    2 teaspoons Morton Lite Salt Mixture
    3 1/2 - T. minced dried onion
    1 tsp. - garlic powder
    1 T - Curry Powder (or more depending on taste)
    1/2 Cup - dried apple rings cut into small pieces
    1 or 2 T - dried parsley
    7 to 11 cups of water
    1 small can (5.78 oz) coconut milk (optional)

Tips

Ocassionally I will add a handfull of raisins to the soup about 5 minutes before its done cooking. YUM!!!


Directions

Put everything in a soup pot, except for the coconut milk if you are using it, and bring to a boil. Reduced heat to low, cover and simmer the soup for 20 to 30 minutes, stirring occasionally. When lentils are cooked, stir in the coconut milk and turn off the heat. Makes 8 - 1 cup servings.
