Introduction

Number of Servings: 38

Ingredients

    2 cups cooked quinoa
    2 large eggs, lightly beaten
    1 cup shredded part skim mozzarella cheese
    3.5 oz. Pepperoni, chopped (half a package)
    1 cup chopped onion
    2 tsp. Minced garlic
    1/2 cup fresh basil, chopped
    1 tsp. Dried oregano
    1/2 tsp. Salt

Tips

They taste even better if you dip them in marinara sauce, but they're delicious on their own too.


Directions

Mix all ingredients together in a large mixing bowl. Spray a mini muffin tin with non-stick cooking spray. Fill each cup up to the top and then press down to compact them. Bake in a preheated 350 degree given for 15 minutes
