Chicken and sweet potato curry (1 cup)

Introduction

Number of Servings: 6

Ingredients

    2 Tbsp oil
    1 c shallots or onions, diced
    1 Tbsp garlic
    5 slices ginger
    2 stalks of lemongrass
    3 Tbsp curry powder
    1 1/4 lb boneless, skinless chicken thighs, cut into bite-sized pieces
    2 Tbsp fish sauce
    1 tsp sugar
    1/2 tsp salt
    1 tsp chili paste
    2 1/2 c chicken broth
    1 can coconut milk
    2 1/2 c sweet potato, cubed
    lime (optional)

Directions

Saute onions, garlic, ginger & lemongrass in oil briefly. Add curry, saute until onions are translucent. Add chicken, mix well & brown. Mix in fish sauce, sugar, salt & chili paste. Add broth. Boil, then simmer 10 minutes. Mix in coconut milk & sweet potato. Boil, then simmer 15 minutes or until potatoes are tender. Remove lemongrass. Serve with lime wedges (optional).

Serving Size: Makes six 1+ cup servings
