2T olive oil
5 lb 99% lean ground turkey (4x 1.25lb packages)
1 large onion
8 cloves garlic
1 head of red cabbage, shredded with the hatred of 1000 suns
1 cup of wheat bran
1 bell pepper
2 28oz cans of crushed tomatoes (no salt added)
2 jalapeno peppers
2 29 oz cans of pureed tomatoes
Spices to taste (cumin, chili powder, curry, whole dried chiles, black pepper, whatever floats your boat)
About the number of servings:
I just divvy the pot into 2.5c containers and adjust the servings according to how many I get. Sometimes it's more, sometimes it's less. YMMV.
Transfer to a large pot.
add chopped peppers
add crushed tomatoes
add shredded cabbage
add wheat bran
Simmer on low for an hour.
Remove from heat. When cool divide into individual 2.5c storage containers
Serving Size: Makes 11 2.5-cup servings
