Low Carb Chocolate Chip Cookies

Introduction

I adapted this recipe from the Lighter Side of Low Carb (http://bit.ly/IEJcX5). In changing this recipe, I:

— removed the walnuts
— added vanilla extract
— used Truvia for the sugar substitute (with the carbs from the erythritol netted out since it is non-glycemic)
— changed the # servings from 42 to 20 (I make bigger cookies than they do)
— substituted some chopped up Divine Chocolate 85% dark chocolate bar for their Ghirardelli 60% dark chocolate morsels

They still come out to just 2.0 net carbs per cookie.

(4.1 total carbs, 2.1 fiber, 0.5 sugars)

Number of Servings: 20

Ingredients

    1/2 cup butter, at room temp
    1/2 cup equivalent brown sugar substitute (Sugar Twin)
    1/2 cup equivalent white sugar substitute (Truvia)
    1 egg
    1 cup almond flour
    1/2 cup coconut flour
    1/2 tsp baking soda
    100g chopped 85% dark chocolate bar
    1 tsp vanilla extract (use REAL vanilla extract in alcohol)

Tips

"These cookies need 24 hours to set up. Trust me on this. If you eat one fresh from the oven, you’re going to want to kick me. Wait 24 hours and you’ll want to kiss me. Less violence, more love."


Directions

01. Preheat oven to 350 degrees F.
02. Grease cookie sheets or line with parchment.
03. In a large mixing bowl, cream together butter and sweeteners until smooth.
04. Beat in egg and extract.
05. Chop the chocolate and add it in.
06. Combine the flour and baking soda in a separate bowl.
07. Slowly add to sweetener/butter mixture.
08. Roll into 4″ balls and place on cookie sheet about 4″ apart (cookies don’t really spread).
09. Slightly flatten each cookie.
10. Bake for 10-12 minutes or until bottom is golden brown.
11. The cookie will look unfinished, but they are cooked.
12. Allow to cool for 2 minutes on cookie sheet before moving gently to a cooling rack.
13. Cool for at least 30 minutes more to allow cookies to fully set.
14. For best results, allow to sit for 24 hours.

Serving Size: Makes about 20 4-inch cookies
