Multi-Bean Soup

Introduction

Plenty of Beans, and little fat. Plenty of Beans, and little fat.

Ingredients

    Beans, Ham, Onions, Garlic, Cumin, Thyme, Salt, Pepper, Red Pepper Flakes, Diced Tomatoes, Tomatoes with Green Chilis

Directions

Actually, Use Dried Multi Bean Mixture. Cover beans in water and soak overnight.

Place beans, chopped ham, chopped onions, diced garlic and two quarts of water in dutch oven and bring to a boil. Add spices and simmer for 1 and 1/2 hours. Add canned tomatoes and juice from cans and return to simmer. Simmer for 1/2 hour more, and then taste for spices. Serve, or, if you like, place half in a blender and mix for a thicker consistency.
