Stuffed Chicken Breast

Introduction

Ingredients

    10 oz frozen chopped spinach, thawed & drained
    2 six-ounce bonesless, skinless chicken breasts
    2 slices turkey bacon, chopped
    1 onion, chopped
    4 oz. light cream cheese
    1/4 cup grated parmesan
    1/2 cup cooked brown rice (I use Birds Eye frozen, prepared according to pkg directions)

Tips

This filling is also great stuffed into a portabello mushroom as a meal, or stuffed into smaller mushrooms as an appetizer or light lunch.


Directions

In a saute pan, saute chopped onion and bacon. When cooked, add thawed, drained spinach. Soften cream cheese in the microwave and add to saute pan. Mix to combine. Lastly, add rice and parmesan. Season with salt & pepper.
Cut one horizontal slice through each chicken breast almost all the way through, so it will open like a book. Season inside and out with salt & pepper. Stuff half of the filling into each breast and flip the top half over to cover (no need to seal with toothpicks). Bake at 375 degrees for about 30 minutes or until done.

Serving Size: makes 2 overstuffed chicken breasts
