Introduction

Have left over pork roast? Do something with it! Cook in Crockpot until tender with 1 onion and carrots, once cooked add tomatoes and other ingredients, serve with tortillas, sour cream and cheese for a filling easy meal. Have left over pork roast? Number of Servings: 16

Ingredients

    Pork roast
    2 cans pinto beans
    1 can black beans
    1 can diced tomatoes and 1 can green chilis or
    2 cans Rotel tomatoes with green chili
    baby carrots or carrot slices
    1 onion diced
    2 cups vegetable broth.
    Sour cream
    Tortillas
    Shredded cheddar cheese

Directions

Cook roast if you dont have one you are using from leftovers. add all ingredients to crock pot and cook until pork is easily shredded. Serve with Tortillas sour cream and cheese.

Serving Size: Makes more than 16 servings of about 1/2 cup each
