Veggie "Rice" Patties

Introduction

Combined two of my favorite recipes into one. Alternatively you could use grated zucchini in place of the veggie rice. Combined two of my favorite recipes into one. Alternatively you could use grated zucchini in place of the veggie rice.
Number of Servings: 2

Ingredients

    1 tbsp mayonnaise or Miracle Whip
    1 egg, beaten
    1 cup Veggie "Rice" (see link)
    2 tbsp flax meal
    2 tbsp Parmesan cheese, grated
    1/4 tsp garlic powder or 1 small clove, minced
    1 tbsp onion, diced
    S & P to taste

Directions

Mix all ingredients thoroughly. Heat a skillet over medium-medium high heat, spray with cooking spray or add a little oil. Drop mixture onto hot skillet and form into patties. Fry for a few minutes on each side or until evenly browned and cooked through.

Serving Size: makes 2 patties per serving
