Introduction

I purposely left out all the trimmings because so many people like to use lettuce for the taco, corn vs flour tortilla, ?? sour cream, ?? type of cheese. The rest of the ingredients are up to you! FYI, I used 2 8" corn tortillas (150/2), 1/4 cup 2% shredded cheddar (80/6), 1 Tbs Lite sour cream (20/2), lettuce, tomato, & medium taco sauce for a total 432 cals, 15 grams fat, 47 carbs, & 27 protein. Two - Two 8" tacos over flowing with meat & yummies!! Ingredients

    2 lb. ground beef-93% lean
    1 medium onion, chopped
    3 grams coconut oil
    dash sea salt
    1/2 tsp fresh ground pepper
    2 Tbsp Chili powder
    4 tsp Onion powder
    3 tsp garlic powder
    2 tsp Oregano
    2 tsp Paprika
    2 tsp Ground cumin
    1 tsp Chipotle Pepper Flakes
    1/8 tsp cayenne pepper
    1 can (14.5 oz/411 grams) Diced Tomatoes, no salt added
    1 can (16 oz) Refried Beans, Traditional.

Tips

Sorry the serving size is so high but this only lasts about 2 or 3 days in my house with my husband! Try freezing a portion to make enchiladas on another day!


Directions

Serving size is about 166 grams or 5.86 ounces (a lot for 8" tacos).

Heat oil in pan, add onions & cook slightly for about 5 minutes. Add ground beef in a pan & cook until done, drain excess fat. Add salt and pepper to ground beef.

Now, add remaining seasonings to beef with the can of diced tomatoes & heat to boiling over medium high heat. Reduce heat & cover. Simmer for approximately 20 minutes, until flavors meld.

Add beans & heat through, about another 5 minutes.
