Chocolate Muffins

    1/4 cup unsweetened cocoa powder
    3/4 cup all-purpose flour
    3/4 cup whole wheat flour
    3 tablespoons white sugar
    2 teaspoons baking powder
    1 cup nonfat milk
    2 large egg whites
    4 teaspoons canola oil
    1 teaspoon vanilla extract


This recipe is out of Weight Watchers New Complete Coolbook. I change the recipe half the white and whole wheat flour. It call for 1/2 teaspoon of salt and 4 teaspoons unsalted butter, I used canola oil.


1. Preheat the oven to 400 degrees; spray a 12-cup muffin tin with nonstick spray.
2. In a large bowl, combine the flours, sugar, and baking powder. In smal bowl combine the milk egg whites, vanilla extract, and canola oil. Pour over the flour mixture, stirring until just blended (do not overmix).
3. Spoon the into the cups, filling each about two-thirds full. Bake until a toothpick inserted in amuffin comes out clean, about 20-25 minutes. Cool in the pan on a rack 5 minutes; remove from the pan.

Serving Size: 12 regular size muffins
