1 c dry quinoa
4 oz. raw pumpkin, in chunks
1 T honey
5 T olive oil, divided
1/2 c chopped walnuts
1/2 c craisins
1/4 c chopped fresh mint
1/2 c chopped fresh parsley or cilantro
1/4 c lemon juice
You can substitute 4 t of dry mint for the fresh.
