Ingredients

    1 10oz package frozen chopped spinach
    3 chicken breast halves (about 2lbs), cooked, boned and shredded
    1 can reduced fat cream of mushroom soup
    1/2 cup low fat plain yogurt
    1/2 cup reduced fat sour cream
    1 cup low fat cheddar
    1 tbsp lemon juice
    1/2 tsp curry powder
    salt and pepper
    2 tbsp grated parmesan
    1/4 cup whole wheat panko breadcrumbs
    1 tbsp flaxseed meal

Directions

Remove the outer wrapper from the box of spinach. Open the end of the box. Microwave for 2 minutes, until thawed. Drain the spinach and put into large bowl. Add the shredded chicken.

In a medium bowl, combine the soup, yogurt, sour cream, cheddar, lemon juice, curry powder, salt and pepper to taste. Whisk together to make a sauce. Pour the sauce over the spinach and chicken. Mix well with a spatula.

Place the mixture into a square baking pan that have been sprayed with cooking spray. Combine the parmesan, breadcrumbs, and flaxseed meal and sprinkle over the top.

Bake at 350 for about 20- 30 minutes until bubbly.
