Introduction

Use your favorite white fish with a combination of fresh veggies for delightful treat!

Number of Servings: 12

Ingredients

    6-white fish fillets (tilapia, cod, swail) cut in cubes
    6-small stalks of celery
    1-jumbo carrot
    1-med yellow onion
    4-roma tomatos
    1-large russet potato
    fresh cilantro
    8-cups of chicken broth
    3-cups of water
    1-lemon
    1-tsp of sea salt
    1-tbsp of onion powder
    1-tbsp of garlic powder
    1-tbsp of dry basil
    1-bay leaf


Tips

For an added kick mix in 1-2 tbsp. of fresh Pico de Gallo with a 1/4 of a med sized avocado to you bowl of soup. Yummy! And if you really want to get crazy have a warm/toasted corn tortilla to eat with it. Super Yummy!
*Don't forget if you do this it will add calories, don't forget to track :)


Directions

Chop all veggies. Slightly cook potatoes in a large skillet (abt 5 minutes) add in carrots (cook w/ potatoes 3minutes) add celery, onion, tomato, and jalapeņo. (Cook and additional 2 minutes) meanwhile put chicken broth and other spices to boil. When broth is boiling add in veggies. Bring to a boil. Add in fish bring back to boil squeeze 1/2 lemon in soup, reduce heat cover and simmer for about 10minutes. Add in cilantro. Cut remaining lemon if wedges to squeeze in soup.

Serving Size: makes 12 1cup servings
